Oil-Free Vinaigrette

Our oil free fruit vinaigrettes are made with fruit, champagne wine vinegar, and a small amount of sugar. Fruit is mashed and added to the champagne wine vinegar and allowed to set in earthenware crocks for at least two weeks. After setting, we add sugar to bring out the fruit flavor, sieve, and bottle. We chose champagne wine vinegar because it is more compatible with fruit than harsher vinegars. We add no oil whatsoever so you may add your favorite oil of choice or use it without oil altogether. There are so many new oils available today including grape seed, walnut, and sesame to compliment the fruit in the vinaigrettes so you can choose what works best with your dish. We personally like to use a walnut oil because it has a flavorful and compatible flavor and is more slippery so a little goes a long way. Our vinaigrettes are very concentrated and go a long ways, so be sure to only use a capful per salad. For best results in a salad with oil, toss the salad first with the oil and then sprinkle the vinaigrette through the salad. Open up your tastebuds and take control of your salad today!
